Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Holy (chicken) mole! Browned chicken simmered in a deeply flavored, spicy chocolate mole will be unlike any other chicken you've ever tried.
1/4 cup olive oil
8 boneless skinless chicken breast halves
1 onion, chopped
1 clove garlic, minced
1 can (4 ounce size) diced green chiles
1 can (8 ounce size) tomato sauce
1 cup chicken broth
2 teaspoons chili powder
1 teaspoon salt
2 tablespoons sugar
1/4 teaspoon Tabasco sauce
2 whole cloves
1 ounce unsweetened baking chocolate, chopped
2 tablespoons creamy peanut butter
Heat the oil in a large skillet over medium-high heat. Add the chicken breasts and cook, turning as needed, until browned on both sides. Remove the chicken and keep warm.
Add the onion and garlic to the skillet. Cook, stirring occasionally, until the onion is soft. Stir in the green chiles, tomato sauce, chicken broth, chili powder, salt, sugar, tabasco, cloves, chocolate, and peanut butter. Cook, stirring, until the chocolate is melted and the ingredients are well mixed.
Add the chicken to the skillet and reduce the heat to low. Cook for 30 minutes or until the chicken is cooked through.
Serve the chicken with the mole sauce.

Wow this was awesome! I had mole in a restaurant and I wanted to make something similar. This was different than what I had but it was WAY better. It's not real high in fat either. I used another reviewers suggestion and used chicken thighs so it was more moist. Try it! you won't regret it.
I used skinless, boneless thigh meat. It was delicious and easy to serve.

This was really, really yummy and it was easy to make! I added chopped tomatillo and 1/4 tsp. cinnamin. We cut the reipe in half -- but we wish we had made the full recipe because the sauce is terrific. It was exactly the mole flavor I had hoped for. I served it with warm corn tortillas and I drizzled a little sour cream over the top.

I've never made mole before. I had a craving and clicked on this recipe at random. I found it very easy to make, and it was incredibly good. I served it over brown rice. I also used more cayanne than called for (1/2 tsp.), because we like spicy food. My husband said it is easily one of the best things he's ever eaten. Thanks for the great recipe!
