Oven Fried Chicken Thighs

1 egg, beaten
2 tablespoons half-and-half
1/2 cup seasoned bread crumbs
1/2 cup instant mashed potato flakes
1 teaspoon garlic salt, optional
4 large bone-in chicken thighs
3 tablespoons melted butter
1 tablespoon oil

directions

Preheat the oven to 400 degrees F.

Whisk together the egg and half-and-half in a shallow dish. Combine the bread crumbs, potato flakes, and garlic salt in another shallow dish.

First, dip the chicken thighs in the egg mixture, turning to coat them on all sides. Let any excess egg drip off. Next, dredge the chicken thighs in the bread crumb mixture, pressing lightly so the crumbs adhere to the chicken.

Place the coated chicken thighs in a shallow baking dish. Drizzle the chicken with the melted butter and oil.

Place the chicken in the oven and bake at 400 degrees F for 35 minutes. Increase the oven temperature to 450 degrees. Bake the chicken for 10-15 additional minutes or until the chicken is browned and crispy and cooked through.

    I do not like chicken thighs . Would chicken breasts work just as well?

    • You'd probably have to adjust the cooking time (and maybe the temperature) since chicken breasts will dry out much faster at high temps. If you do try it with chicken breasts, let us know what changes you made.

    Delicious!!! The coating on the chicken is awesome. I added a dash of cayenne to it and regular salt and omitted the garlic salt.
