Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
1 pound boned chicken breast
1 tablespoon oil
4 ounces unsalted cashew nuts
3 ounces canned mushrooms
Marinade
3 spring onions, chopped
3 tablespoons soy sauce
2 tablespoons hot pepper oil
2 tablespoons sesame seed oil
1 tablespoon sesame seed paste
1 tablespoon ground black pepper

Put the marinade ingredients in a bowl. Cut the chicken into cubes, then add to the marinade, turning to coat thoroughly. Leave to marinate for 30 minutes.
Meanwhile, heat the oil in a wok or frying pan, add the cashew nuts and fry until golden brown. Drain on kitchen paper.
Add the chicken and marinade to the pan and stir-fry for 2-4 minutes. Drain the mushrooms, halve and add to the pan. Cook for a further minute.
Pile the mixture onto a warmed serving dish and sprinkle with the nuts.

A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

Okay- the sauce does not need a cheater thickening agent! I used light brown sugar, instead of white sugar- and instead of food coloring, I used a pinch of saffron! I substituted teriyaki sauce for the soy sauce- and the end result was awesome! And it WAS thick enough, be sure to simmer it long enough, stirring quite a bit! Just a suggestion; use garlic and green onion in your chicken recipe. :-)
