ingredients
4 pounds roaster chicken, cut up
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
3 tablespoons olive oil
2 onions, sliced
1 stalk celery, sliced thin
2 cups peeled and diced potatoes
1 cup chopped tomatoes
1/2 cup water
1 teaspoon dried oregano
3 tablespoons chopped fresh parsley
1 cup frozen peas, thawed
directions
Season the chicken with the salt and pepper.
Heat the oil in a large skillet over medium-high heat. Add the chicken and cook, turning, until browned on all sides. Remove the chicken and set aside. Add the onions to the skillet and cook, stirring occasionally, until soft, about 5 minutes.
Place the celery and potatoes in the bottom of the crock pot. Top with the chicken, onions, tomatoes, water, oregano, and parsley.
Cover the crock pot and cook on low heat for 5-6 hours or until the chicken is cooked through and the potatoes are tender. Turn the crock pot to high heat and add the peas. Cover and cook for 15 more minutes.
Serve hot.
