Classic roast chicken made easy in the crock pot. A great way to keep the chicken extra tender since the crock pot locks in the steam.
1 package (6 ounce size) stuffing mix
12 carrots, peeled and sliced
4 pounds roasting chicken
salt
black pepper
paprika
Prepare the stuffing as directed on the package adding 1/4 cup more water than called for. Set aside to cool.
Place the carrots in the bottom of the crock pot.
Stuff the chicken with the cooled stuffing. Place the chicken on top of the carrots in the crock pot.
Sprinkle the chicken with salt, pepper, and paprika.
Cover the crock pot and cook on low heat for 6-8 hours or until the chicken is cooked and tender.
Remove carefully from the crock pot using two large spoons and place on a cutting board. Carve as desired. Serve the roast chicken with the stuffing and carrots.

Pretty darn good. I followed your recipe to the Tee (except I added a little brown sugar) but since I like my chicken brown and a little crispy I buttered the chicken and browned it in the oven first using the broiler but it still wasn't as brown enough until I read your recommendation on using kitchen bouquet. It turned out restaurant perfect! Thank you so much!!!

Great recipe, the kids loved it and now I give it to the neighbor's Grand Children to help out and they love it too. Inexpensive and feeds many. I buy cruelty free certified as I am vegetarian.

I make this frequently but my chicken never comes out like the picture, the skin is always washed out looking and not pleasant to look at, I don't like the skin removed before cooking as I think you loose some of the flavour, how do you brown or crisp the skin like in the picture?
The skin doesn't really get crisp like it does in the oven but it does get kind of "dry" as long as there isn't additional water in the crock pot (there is steam of course). To give it some color we usually use a spice rub or you can even brush it with a browning sauce like Kitchen Bouquet.

I take all the skin off the chicken (strip it naked) and put in the crockpot. Almost no fat in the drippings and lots of flavor and doesn't dry out.

This is 5 star. Only we used our own stuffing recipe. Along with the chicken and stuffing, we used the drippings to make gravy, mashed potatoes, the carrots, and red beets. We started off with a nice salad. For dessert a piece of coffee cake and a cup of coffee.

such an easy recipe... I added some items to it to make it personalized... onions and shallots. I also used a chicken seasoning (low salt) and added butter under the skin.
I have not tried this recipe specifically, but I do a variation of it. I butter the crockpot on the sides and bottom generously. I then season the chicken to taste and place it in the crock pot on low or high depending on your crockpot for 6 or 7 hours.

This was an incredibly easy dish to prepare that I really wasn't expecting much from it. I just happened to have all the ingrediants and decided to give it a shot. What a pleasant surprise, I will def. make this again.
