Three-Cabbage Slaw With Creamy Honey-Mustard Dressing

1/4 cup cider vinegar
1/3 cup reduced-fat sour cream
2 tablespoons honey
2 tablespoons spicy brown mustard
1 teaspoon olive oil
3/4 teaspoon salt
6 cups shredded red and green cabbage
2 cups shredded napa cabbage
4 carrots, shredded
2 scallions, thinly sliced
directions
In a large bowl, whisk together the vinegar, sour cream, honey, mustard, oil, and salt. Add the cabbages, carrots, and scallions, tossing to combine.
Refrigerate for 1 hour or until chilled.
