A delicious cauliflower salad made with chopped cauliflower, green onions, celery leaves, and a sour cream based salad dressing.

1 cauliflower
1/4 cup minced green onions
1/2 cup minced celery leaves
Dressing
1 cup sour cream or plain yogurt
6 tablespoons salad oil
2 tablespoons cider vinegar or lemon juice
1/4 teaspoon paprika
1/8 teaspoon black pepper
1/8 teaspoon dry mustard
salt, to taste
paprika to sprinkle on top
chopped green onions for garnish
1 carrot, peeled and grated for garnish
Immerse the cauliflower in cold salted water, head down, for about 10 minutes. Drain well.
Remove the core and finely chop the cauliflower.
In a large mixing bowl, combine the cauliflower with the onions and celery leaves, mixing well.
Combine the dressing ingredients in a separate bowl, blending well.
Pour the dressing over the vegetables and toss gently but thoroughly. Cover and chill at least 1-2 hrs. to blend flavors.
Transfer to a salad bowl. Sprinkle tops with paprika, green onions and grated carrot.
