Moist Chocolate Cake With Sour Cream Frosting

Cake
1 box (18.25 ounce size) devil's food chocolate cake with pudding in the mix
1 cup sour cream
3/4 cup water
1/2 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
Chocolate Sour Cream Frosting
1/2 cup butter, cut in pieces
2/3 cup unsweetened cocoa powder
3 cups icing sugar
1/3 cup sour cream
1 teaspoon vanilla extract
directions
Place rack in center of oven and preheat to 350 degrees F.
Generously grease two 9-inch round cake pans with shortening. Dust with flour, shaking off excess.
Place all ingredients in large bowl. With electric hand mixer on low speed, beat 1 minute. Scrape down sides of bowl with spatula. Increase speed to medium; beat 2 minutes or until batter is smooth. Divide batter between prepared pans; smooth tops with spatula.
Place pans side-by-side in oven. Bake 28 to 32 minutes, until cakes spring back when pressed with finger. Remove pans from oven and place on wire racks; cool 10 minutes. Run knife around edge of each layer; invert each on to rack, then invert again so layers are right side up. Cool 30 minutes.
Transfer one cake layer to plate. Spread top with frosting. Place second cake layer on top. Spread remaining frosting on top and sides of cake.
For Chocolate Sour Cream Frosting: Melt butter in small saucepan over low heat or in bowl in microwave on high for 45 seconds. Add to bowl with cocoa powder. Whisk until smooth. Add icing sugar alternately with sour cream, beating with electric hand mixer on low speed 1 to 1 1/2 minutes or until smooth. Add vanilla. Increase speed to medium; beat 1 minute more or until light and fluffy.

This was yummy, I added 1/2 a chocolate pudding packet too... Everyone ate them up, really light. Think nex time I'll use some Greek yogurt for some more protein. ;) thanks
