1 1/2 pint canned plums
2 boxes (1 pound, 2.25 ounces each) chocolate cake mix
12 egg whites
1/4 cup vegetable oil
1 cup mini chocolate chips (optional)
2 tablespoons powdered sugar (optional)
vegetable cooking spray
directions
Measure 2 1/4 cups drained, pitted plums. Puree plums and add 3/4 cup plum liquid to measure 1 1/2 pints.
In a mixer bowl with flat beater attachment, combine cake mix, Plum mixture, egg whites and oil. Beat on medium 2 minutes longer. Mix in chocolate chips.
Spread evenly in 26" x 18" x 1" sheet pan coated with cooking spray. Bake at 350 degrees F about 20 minutes or until wooden pick inserted in center comes out clean. Cool. Dust with powdered sugar before serving, if desired.
