ingredients

6 ounces unsweetened chocolate
1 cup sweet Onion, like Vidalia, finely diced
1 cup vegetable oil, divided
2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour milk


directions

Melt chocolate in micro-wave, stirring often. In 2 Tbsp. of the oil, caramelize onions over medium low heat for 8 to 10 minutes. In large electric mixer bowl, beat oil, sugar, eggs, and vanilla until nice and fluffy for 2-3 minutes. Beat in warm chocolate and caramelized onions. Mix flour with baking soda and salt; stir into batter alternately with milk.

Bake in a 350 degree oven in two round cake pans for 25 to 35 minutes, checking with toothpick by sticking it in cake close to the middle. If it comes out clean cake is done. Remove from oven and let cool in pan 10 minutes. Turn out on cooling rack and let get completely cooled before icing. Use icing of your choice.

footnote: this is a recipe my dad's wife gave me. She is fond of saying she will eat onions on or with anything including ice cream. Now she's a pretty good cook so give this a try, you might just like it.
