This cake is made with onions that have been caramelized. They add a sweet and savory flavor to the cake, and the chocolate gives it a rich and decadent taste.
6 ounces unsweetened chocolate
1 cup sweet onion, like Vidalia, finely diced
1 cup vegetable oil, divided
2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour milk
Preheat the oven to 350 degrees F. Grease and flour 2 round cake pans.
Melt the chocolate in the microwave, stirring every 15 seconds.
Combine the onion and 2 tablespoons of the oil in a saucepan over medium-low heat. Cook, stirring frequently, for 12-15 minutes or until lightly caramelized.
In a large mixing bowl, combine the remaining oil, sugar, eggs, and vanilla. Beat on medium speed for 2-3 minutes.
Add the warm chocolate and onions to the cake batter and beat on low speed for 1 minute.
Combine the flour, baking soda, and salt in another bowl. Mix well then with the mixer running, slowly add the flour mixture to the cake batter alternately with the milk.
Divide the batter between the two prepared cake pans. Place in the oven and bake at 350 degrees F for 25-35 minutes or until the cakes test done in the center when tested with a toothpick.
Remove the cakes from the oven and let cool in the pan for 10 minutes. Remove the cakes from the pans and let cool completely on wire racks before icing as desired.
