Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

These bars are delicious and very rich. I made a mistake and used aluminum foil like the recipe said and that is a big NO NO. The foil stuck to the sides and bottom. I actually had to put them in the fridge and wait until they really cooled off. I then got a cookie sheet and flipped the bars over onto the sheet and started peeling the foil off of it. I lost some of the sides because it got very hard and the foil wouldn't come off so I had to cut it off. Next time I make them I will grease the baking dish. The bars are DELICIOUS!

I've been making this recipe at Christmastime for years,(I call them Magic Squares), but I use Vanilla Wafers instead of graham crackers. I cut the pieces very small because it is so rich (like candy), and I think that they are very easy to make (I wouldn't have given the difficulty rating a three.)
