It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Christmas Shortbread Bars

ingredients
1 package shortbread mix
1 can sweetened condensed milk
1 1/2 cup flaked coconut
1 cup chopped red and green candied cherries
1/2 cup chopped pecans
1/4 cup raisins
directions
Press shortbread mix crumbles directly into 13" x 9" cake pan. Bake at 350 degrees F for 12-15 minutes.
Combine remaining ingredients. Spread evenly over shortbread crust. Bake 25-30 minutes longer. Cool and cut into bars.
Alternative: Cherries can be replaced with mixed candied fruit if desired. Use your favorite nuts too. Almonds, hazelnuts and walnuts are all good.
