Ingredients:
1 cup yellow corn meal
2/3 cup all-purpose flour
2 teaspoons granulated sugar
2 teaspoons baking powder
1 teaspoon salt
2 large eggs
3/4 cup milk
2 tablespoons vegetable oil, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 cups vegetable oil for frying
1 small onion, minced, or to taste

Directions:

In a bowl, mix together, cornmeal, flour, sugar, baking powder and salt. In another bowl, beat the eggs. Beat in the milk and 2 Tbsp of the vegetable oil.

Stir in the flour mixture, then the onions. In a deep pot, add the remaining oil and heat over medium/high heat ( 375F-400F) until very hot. The oil must be hot or the hush puppies will absorb oil and they will be heavy and oily. Drop the prepared batter by rounded 2 Tbsp into the hot oil. Fry until golden brown, turning them as they brown. Make sure the the heat is just right and the hush puppies cook all of the way through, just not brown on the outside. Drain on paper towels and keep warm until all of the batter has been used. Jan
