Slow Cooker Green Chili Beef Stew

ingredients
3 pounds beef stew meat
1/2 teaspoon fajita seasoning
1/2 teaspoon salt
2 cans (7 ounce size) chopped green chiles, undrained
1 large onion, chopped
1 clove garlic, minced
directions
Season the meat with the fajita seasoning and salt, tossing well to coat evenly. Place the meat in the crock pot. Top with the green chiles, onion, and garlic. Stir to combine.
Cover the crock pot and cook on low for 4-6 hours or until the meat is tender.
To serve, spoon the mixture onto tortillas or rice. Top with desired condiments such as sour cream, cheese, pico de gallo, guacamole, etc.

I added more garlic and some crushed red pepper. Served with the accompaniments it's outstanding but could be a bit bland if served without good guac and such. I think I'd use the hot green chiles next time instead of the regular because the long cooking time it just kinda fades the flavors a bit. Great recipe though!

I used this recipe as a base and it came out great. I added 1 can of corn, 1 can of diced tomatoes and 1/2 cup water. My garlic cloves were a littled on the aged side, so I increased to 3 cloves and also increased the fajita seasoning to 1 tbs. I recommend serving on rice, or with warm tortillas or crusty bread. Since I was missing a little heat, next time I will most likely add a little diced jalapeno. Thanks for the recipe!
