This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.
Flan de Huevos

ingredients
1 can condensed milk
1 can evaporated milk
1 can whole milk (use evaporated milk can)
6 eggs
1 teaspoon vanilla extract
1 cup granulated white sugar
directions
Caramelize sugar by heating at medium to low heat until liquid golden brown. Do not burn! Pour into a flan pan (I use a Teflon Bundt pan and it works well.)
In a glass bowl, mix all the other ingredients and beat at medium speed for about 1 minute until well blended or use wire whisk. Do not over-beat!
Pour into prepared pan. Set pan in water. You can use a larger bowl half filled with water and set pan on top where it is half immersed in water but not touching bottom.
Put in a 325 degrees F oven for 25 minutes or more until a knife inserted in the middle comes out clean. Turn flan into plate, caramel will drizzle on top. Enjoy.
