ingredients
1/2 cup shortening
3/4 cup sugar
1 egg
1/2 teaspoon almond extract
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 package (6 ounce size) semisweet chocolate chips
3/4 cup coconut
3/4 cup chopped maraschino cherries, very well drained
directions
Cream shortening with sugar. Beat in egg and almond extract.
Combine flour, baking powder and salt. Stir in to creamed mixture.
Mix in chips, coconut and cherries.
Drop from teaspoon onto greased cookie sheets.
Bake at 350 degrees F for 12-15 minutes.

Made a batch of these this morning and we can't stop eating them! Looks like I'll be making a second batch since they were supposed to go to a church group tomorrow!
