ingredients
1/2 cup omelet batter
1/4 cup roasted red onion
1/4 cup roasted mushrooms
1/4 cup roasted red bell pepper
1/4 cup fresh baby spinach
1/4 cup fresh Roma tomato
directions
Spray bottom of a baking pan. Blend eggs for 30 seconds on high speed and pour into baking pan. Sprinkle fillings evenly over egg surface.
Bake for 10-12 minutes on high heat.
