Pear and Walnut Pancakes with Blue Cheese

ingredients
2/3 cup plain flour
1 egg
1/2 cup milk
oil or vegetable shortening to cook pancakes
Filling
2 medium ripe dessert pears, peeled and diced
1 ounce walnut pieces, chopped
1/4 cup brown sugar
1 package (100-g size) organic blue cheese, cut into cubes
maple syrup or icing sugar
directions
Sift flour into bowl, make a well in center and break the egg. Beat together with a wooden spoon, adding the milk a little at a time until you have a smooth batter. Allow to stand while making the filling.
In a bowl combine the filling ingredients and mix well. If batter is too thick, add a little water to thin it down.
Heat oil or fat in a small pan and cook pancakes until done. Serve filled with cheese mixture and sprinkled with icing sugar or drizzled with maple syrup.
