ingredients
1 tablespoon oil
1 Vidalia onion, diced
1/4 red bell pepper, diced
1/4 green bell pepper, diced
2 tablespoons chopped fresh parsley
1 tablespoon lime juice
1 teaspoon chopped fresh mint
1/2 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
directions
In a skillet, heat oil on medium-high heat. Saute onion and peppers until wilted slightly and onions are translucent.
Remove from heat and stir in remaining ingredients. Serve warm.
