ingredients
1 tablespoon olive oil
1/2 teaspoon hot Asian sesame oil
1 tablespoon ginger, grated
2 cloves garlic, minced
1/2 cucumber, halved lengthwise, peeled and seeded, then chopped into cubes
1 medium tomato, seeded and diced
1/4 teaspoon soy sauce
1/8 teaspoon salt
1/8 teaspoon white pepper, freshly ground
directions
Heat both oils in large skillet. Add ginger and garlic and saute for 1 minute. Mix in cucumber and tomato.
Remove from heat and add soy sauce, salt and pepper. Cool and serve over curried fish.
