Combining rich black or Greek olives, aromatic herbs, garlic, and optional crushed red pepper, these marinated olives are perfect as an appetizer or to enhance your favorite dishes.

1 pound oil cured black or Greek olives, drained
2 tablespoons olive oil
2 tablespoons minced fresh herbs (any combination of oregano, thyme, basil and/or rosemary)
3 cloves garlic, lightly crushed
1 teaspoon crushed red pepper, optional
Combine all ingredients in jar with tight-fitting lid and shake well.
Marinate at room temperature 2 days, shaking jar once daily. Remove garlic cloves before serving.
