Ribs are coated with a maple-mustard glaze and slow cooked until tender.
1 large onion, cut into 1/4-inch-thick slices, separated into rings
1/3 cup maple flavored syrup
1/4 cup spicy brown mustard or Dijon mustard
3 pounds country-style pork ribs, trimmed of fat, cut into 3-inch pieces
Place onion rings in the bottom of a 3-1/2 to 4 quart crock pot/slow cooker.
In small bowl, combine syrup and mustard; mix well. Spread evenly over ribs.
Place coated ribs over the onions. Cover; cook on LOW heat setting for at least 8 hours.
If desired, serve with additional mustard.

The crock pot always makes good, tender ribs. I liked the mustard-maple sauce combination. It had a little bit of sweetness and a little bit of tang, neither of which was overpowering. If you wish, you can run the cooked ribs under the broiler to give them more color before serving.
