Potato And Brat Salad

ingredients
6 cups coarsely chopped red potatoes
1 1/2 cup reduced-calorie mayonnaise, or salad dressing
1/4 teaspoon salt
2 tablespoons prepared mustard
1 small cucumber, peeled, seeded, diced
1 small red bell pepper, or yellow, chopped
4 fully-cooked smoked bratwurst, halved lengthwise, sliced
directions
In a large saucepan or Dutch oven, bring 6 cups salted water to a boil. Add potatoes and return to a boil. Cook over medium heat for 6 to 8 minutes or until tender. Drain, then rinse with cold water to cool.
Meanwhile, in a large bowl, combine mayonnaise, salt and mustard. Blend well.
Add potatoes and all remaining ingredients except bratwurst. Mix well.
Cover and refrigerate at least 1 hour or until serving time. To serve, mound potato salad on platter and spoon brats around the salad.
