New Potato Salad With Gazpacho Dressing

ingredients
1 pound baby new potatoes, scrubbed but not peeled
GAZPACHO DRESSING
2 large ripe tomatoes, halved, seeded, chopped
2 ounces roasted red bell pepper, chopped
1/2 small red onion, chopped
1 clove garlic, chopped
3 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
1 pinch sugar
1 bunch flat-leaf parsley, chopped
sea salt
freshly ground black pepper
directions
Bring a large saucepan of lightly salted water to a boil, add potatoes, and return to a boil. Reduce the heat and simmer for about 12 minutes or until the potatoes are just tender when pierced with a knife.
Meanwhile, put the dressing ingredients in a large bowl and mix well. Add plenty of salt and freshly ground pepper.
Drain the potatoes thoroughly and empty them into the dressing. Mix well and serve hot or at room temperature.
