Boursin Potato Salad

ingredients
5 pounds yellow potatoes boiled and skinned
1 package Boursin cheese (approx 5.2 ounce size)
1 cup mayonnaise (or as much needed to bind)
2 teaspoons Dijon mustard (or to taste)
2 tablespoons olive oil
2 tablespoons chopped white onion
1 tablespoon fines herbes
1/4 cup chicken broth (or as needed)
salt and pepper, to taste
directions
While potatoes are cooking, mash cheese in the bowl and add about a cup of mayonnaise and mix well. Add some olive oil, Dijon mustard, and heated chicken broth and mix until dressing is creamy.
Drain potatoes and when warm, peel and slice and add to dressing and mix well until potatoes are covered with dressing and add herbs and onions and mix well. Depending on how many potatoes one uses, add enough mayonnaise etc. Serve warm or well chilled. When chilled, the mixtures blend even better.
