Perfect for leftovers, this hearty soup contains turkey broth, cooked turkey, barley, celery, carrots, onion, and seasonings.
6 cups turkey or chicken broth
1 bay leaf
1 cup turkey, diced cooked
1 teaspoon dried thyme
1 cup pearl barley
1/4 teaspoon dried marjoram
1 onion, chopped
1/4 teaspoon ground black pepper
2 stalks celery, chopped
2 tablespoons chopped fresh parsley
3 carrots, sliced
Combine all the ingredients in soup pot or slow cooker. Cook over low heat in the slow cooker for 6 hours or simmer on the stove for 1 hour, or until the carrots are tender and the barley is soft.

The crock pot is perfect for recipe with barley because it makes it so wonderfully tender. This soup is a great way to use up leftover turkey too. Very good flavor and very simple to make.

We had bbq'd turkey tenderloins and had leftovers. Made this soup with it and we loved it. Will definitely be making it again next time we have extra turkey. Would be good with chicken too I think.
