Thai Turkey Coconut Soup

ingredients
3 1/2 cups homemade or canned turkey or chicken broth
1 cup bite-size cubes cooked turkey
1 can (15 ounce size) straw mushrooms, drained
OR
1 cup sliced fresh mushrooms
1 can (14 ounce size) coconut milk (unsweetened)
2 hot Thai or other chiles, seeded and minced
6 tablespoons thai fish sauce
4 tablespoons lime juice
1 cup baby bok choy or cabbage
kaffir lime leaves for garnish, optional
cilantro for garnish, optional
directions
In medium saucepan combine chicken broth, turkey, mushrooms, coconut milk, chilies to taste, Thai fish sauce, lime juice, and bok choy or cabbage, and simmer for 15 minutes.
Serve garnished with lime leaves, cilantro, if desired.
