ingredients
4 cups turkey or chicken broth
1 1/2 cup diced potatoes
1 cup diced celery
1 cup diced carrots
1/2 cup diced onions
1/4 cup butter or margarine
1/3 cup all-purpose flour
3 cups milk
1 tablespoon soy sauce
8 ounces processed cheese spread, cubed
2 cups chopped cooked turkey
directions
Combine the broth and the vegetables in a large sauce pan. Cover and cook over medium heat for 15 minutes or until the vegetables are tender.
Melt the butter in a Dutch oven over low heat. Add the flour, stirring until smooth. Cook for 1 minute, stirring constantly.
Gradually stir in the milk and cook over medium heat, stirring constantly, until thickened and bubbly. Gradually stir in the vegetable mixture, soy sauce, cheese and turkey. Cook until the cheese melts and the soup is thoroughly heated.

I added some black pepper, garlic powder, season salt, and also garnished with shredded cheddar. I used the leftover pickens from the Thanksgiving turkey and it was great! My young son ate 3 bowls!!

Very simple, something perfect to do with leftover Turkey, My kids ate it up and they are very pickey... I loved it.
