Bacon Cauliflower Salad

Lettuce, cauliflower, and bacon mixed with a sweet and creamy parmesan mayo is a great substitute for picnic staples like potato or pasta salad.

ingredients

1 head iceberg lettuce
1 sweet onion, thinly sliced rings
1 pound bacon
1/2 head cauliflower
1/3 cup Parmesan cheese, grated
1/4 cup sugar
salt
black pepper
1 cup mayonnaise

directions

The night before serving, rinse and dry lettuce. Fry, drain and crumble bacon. Break cauliflower florets into bite-size pieces.

Layer lettuce, thinly sliced onion rings, crumbled bacon and cauliflower floret pieces in a bowl. Sprinkle grated cheese, sugar, salt and pepper, to taste, on top. Spread mayonnaise over all. Cover tightly and refrigerate overnight.

Mix well before serving.

    I've made this twice this week!! AMAZING! Super simple but super good. It's gone in a flash. Gave my sister the recipe and she made it with low fat variations which wasn't bad but the full fat is best. She used ff mayo, splenda, and turkey bacon. I wouldn't serve it to guests that way but as a regular meal salad if you are dieting it was definitely acceptable. Make it as written and you'll be happiest. You might gain a pound, but life is short.

    I made this salad and didn't use as much sugar it called for and i thought that my husband was going to eat the whole thing it is a very good salad i would recommend to all who like the ingredients that are in this salad.
