ingredients

4 cups cauliflower florets
1/2 cup green onion, sliced
1 can (8 ounce size) water chestnuts, drained and chopped
2/3 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons ranch salad dressing mix
1 cup radishes, sliced thin

directions

Combine the cauliflower, onions and water chestnuts in a bowl. In a small bowl combine the mayonnaise, lemon juice and ranch dressing mix.

Pour over vegetables and chill for at least 2 hours.

Just before serving add the radishes.

    Delicious! Great salad to accompany a wide variety of dishes. Definitely don't skip the chilling part. I tasted it after I mixed it, then again after chilling and it was vastly improved. I used fat-free mayo to make it a little healthier.
