Marinated Artichoke Salad

Artichoke hearts make a wonderfully light and refreshing salad that is perfect for any occasion.
1-2 hrs
ingredients
12 canned artichoke hearts, cut into quarters or halves
1/2 cup olive oil
3 tablespoons sherry vinegar
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh parsley
salt and pepper, to taste
directions
Combine all the ingredients in a non-reactive bowl. Mix well so the artichoke hearts are well coated in the marinade.
Cover the bowl and chill the artichoke hearts for 1-2 hours or overnight before serving.
