I made a vegetarian version of this. So added two kinds of beans and didn't cook it with the sour cream but added it after on top as a topping. It was great! I wished I had used corn tortillas or regular lasagna. The only one I could find was flat no boil lasagna and it tasted like won ton wrappers.. :( I'll defiantly try it again!

WOW!! I had a weekend of Mexican food for my Mexican fiance meeting my Irish family. I made all traditional Mexican food 3 meals a day. This was the final dinner on the final day together and was the simplest to make (after laboring over the stove with unfamiliar recipes all weekend) and it went over SOOO WELL!!! There were left overs from every meal EXCEPT THIS ONE! People were having 2nd and 3rd helpings!
I HIGHLY RECOMMEND THIS RECIPE!!
