Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Very easy to throw together and fairly tasty. Despite the cook's note, the amount of jalapeno pepper called for was just about right, in my opinion. Maybe a little less soy sauce, or low-sodium soy sauce, as it thinned it out and made it a little on the salty side.
