A simplified version of spinach dip. Add your own favorite seasonings to change up the flavors. Try Italian seasoning, taco seasoning mix, or various dry soup mixes (even the flavor pack from a package of ramen is good in here!)

10 ounces frozen chopped leaf spinach, thawed 2 teaspoons butter or oil 1/2 cup chopped onions 1 pint mayonnaise 1 cup sour cream salt and pepper, to taste
directions
Drain the spinach well. Place the spinach in paper towels and press firmly to remove excess liquid. Place the spinach in a bowl.
Heat the butter or oil in a skillet over medium heat. Add the onion and cook, stirring frequently, until the onion is soft. Add the onion to the bowl.
Add the mayonnaise and sour cream to the bowl and mix well. Season to taste with salt and pepper. Cover the bowl and chill for 1 hour or overnight.
Serve with vegetables or chips for dipping. To serve in a bread bowl, hollow out a loaf of pumpernickel bread and fill it with the dip just before serving time.
