8 slices bacon, cut in half
16 cubes seedless watermelon, about 1 1/2 inches square
6 ounces crab meat (lump)
salt, to taste
Using a small spoon or melon baller, carve out a small indentation in each watermelon cube.
Place a bit of crab in each indentation and salt lightly. Wrap with bacon and secure with a toothpick.
Place under broiler and cook until bacon is crisp.

This recipe seemed different and a little offbeat. So I snuck them in with other, more typical appetizer fare and our guests loved them! The lightly sweet watermelon juice keeps the meats from tasting too salty. Just be sure you don't get watermelon that is too ripe, or it won't slice into the kind of neat, solid cubes that are required.

We didn't salt the crab the first go-around but the salt made all the difference. You could blend the crab with something else but personally I don't think it needs to be that complex. The watermelon changes texture dramatically when cooked - even non-watermelon eaters enjoyed it!
