Seasoned Pepper Beef Tenderloin Appetizer

ingredients
5 pounds trimmed beef tenderloin
1 tablespoon olive oil
1 teaspoon salt
1 1/2 tablespoon seasoned pepper

Dijon-Horseradish Sauce
1 cup mayonnaise
2 tablespoons whole grain Dijon mustard
2 tablespoons prepared horseradish
2 tablespoons sour cream
1 tablespoon chopped fresh chives
directions
Brush tenderloin evenly with olive oil; sprinkle evenly with salt, and rub with seasoned pepper. Place on lightly greased rack in a roasting pan; let stand 1 hour at room temperature.
Bake at 500 degrees F for 15 minutes; reduce heat to 375 degrees F and bake 40 to 45 minutes or to desired degree of doneness (145 degrees F for medium rare).
Remove from oven. Cover tenderloin loosely with foil and let stand 10 minutes before thinly slicing. Serve sliced beef on rolls with Dijon-Horseradish Sauce.
For Dijon-Horseradish Sauce: Stir together all ingredients until blended; cover and chill until ready to serve.
