Spinach Radiatore

ingredients
4 cups radiatore pasta
3 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
10 ounces fresh spinach, chopped
1/4 cup vegetable or chicken stock
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup light cottage cheese
directions
In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot.
Meanwhile, in large skillet, heat 2 Tbs. of the oil over medium heat. Cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened.
Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted. Stir in cottage cheese.

I just tried this recipe, Not bad but needs some improvement. My wife and I believe this would be better if made with an alfredo sauce. We will try this recipe again with the alfredo sauce and let you know what we think. Stay tuned, more to come.
