10 ounces tomato, red pepper & basil pasta
1 tablespoon olive oil
1 clove garlic minced
1 pound fresh spinach washed & cleaned
1/2 cup crumbled feta cheese
1/2 cup chopped pitted black olives
Bring a large pot of water to a boil. Cook the pasta until al dente.
Meanwhile, heat the olive oil over medium heat in a skillet. Add the garlic and cook for 2 minutes until soft (not browned).
Increase the heat to medium high and add the spinach. Stir fry for 5 minutes until wilted.
Rinse and drain the pasta. Stir in a splash of olive oil. Divide pasta between individual serving plates. Top with the spinach, feta cheese, and black olives. Serve immediately.
Plain pasta can also be used, you can add a dash of ground black pepper, and fresh basil to pick up plain pasta.
