ingredients
12 ounces fettuccine pasta
1 package (10 ounce size) frozen chopped spinach (thawed)
1 cup water
6 ounces reduced fat cream cheese (Neufchatel)
1 tablespoon chicken bouillon granules
OR
3 chicken bouillon cubes
1/8 teaspoon ground nutmeg
directions
In large pot, cook fettuccine as package directs, adding spinach to water during last 4 minutes of cooking time. Drain fettuccine and spinach in colander.
In same pot, over medium heat, combine water, cheese, bouillon and nutmeg; stirring constantly until cheese is melted.
Add fettuccine and spinach; mix well. Garnish with toasted bread crumbs and grated Parmesan cheese if desired.

my family absolutly LOVES this dinner. Even my young children (3 and 4 years old) Enjoy the spinage in this recipe. I actually add more spinage and cream cheese then what the recipe calls for. VERY YUMMY!!
