A creamy pina colada base is so good that it's a shame to limit it to just one kind of cocktail. Fresh strawberries and triple sec add a fruity twist and give these coladas a lovely pink color.


1/2 pint fresh strawberries, hulled and coarsely chopped
2 tablespoons sugar
4 ounces bottled pina colada mix
3/4 cup your favorite citrus juice, a tropical blend works best
3 ounces white rum
2 ounces triple sec
1 cup crushed ice
Process the strawberries and sugar in a food processor or blender until smooth. Transfer the strawberry puree to a large pitcher. Add the pina colada mix, fruit juice, rum, and triple sec. Stir well then place in the refrigerator for 1 hour to chill.
When ready to serve, fill glasses with 1/4 cup of crushed ice in each. Pour the strawberry pina colada mixture over the ice. Garnish with fresh mint or a slice of fruit, if desired.
