Creamy, tropical pina coladas aren't off limits just because you're taking things a little lighter. Trading regular coconut milk for light coconut milk makes the colada much lower in fat and calories, but thanks to fresh pineapple and lime the drink keeps its delightful island flavor.

1/3 cup finely chopped fresh pineapple
2 1/2 ounces coconut rum such as Malibu
1/4 cup light coconut milk
1 tablespoon fresh lime juice
1 tablespoon sugar
6 ice cubes
pineapple wedge, for garnish
Combine the pineapple rum, coconut milk, lime juice, sugar, and ice cubes in a blender. Process on high speed until smooth and frothy.
Pour into a tall glass, garnish with a pineapple wedge, and serve immediately.
