When you're cooking Italian, it's sometimes easy to get so caught up in the cheese and pasta that veggies get forgotten. Not to worry, this recipe makes sure you get your dose of greens alongside chicken, ziti, and romano cheese.
1/2 cup butter
1/3 cup olive oil
5 cloves garlic, minced
1 cup white wine
1 bunch broccoli, cut in florets
1 pound boneless, skinless chicken, cut in bite-sized pieces
1 box (1 lb size) ziti pasta, cooked and drained
grated Romano cheese, as needed
Heat the butter, oil, and garlic in a skillet over medium-low heat. Let cook, stirring frequently, for 10 minutes.
Add the wine and bring to a boil over medium-high heat. Reduce the heat to medium-low and let simmer for 15 minutes.
Bring a pan of water to a rolling boil over medium-high heat. Add the broccoli and let cook for 5 minutes. Drain well and set aside.
Add the chicken to the garlic-wine mixture and cook until almost cooked. Add the broccoli and cooked pasta to the skillet. Cook, stirring occasionally, until heated through. Sprinkle with the Romano cheese and serve immediately.

LOVELY! I used sliced chicken tenders (that's what I had)whole grain pasta, & added in a few sliced Crimini mushrooms. We love garlic, so the amt. was ok w/us. E-Z & delicious dinner, so we'll definitely have this again & again. Thanks :-)

I only used 2 cloves garlic and it was still potent. I would use less broccoli and more chicken next time.

VERY garlicky but good. I also made this with wilted spinach and it was good.
