There's something about baked ziti with ricotta cheese that just hits the spot. The combination of creamy ricotta, hearty pasta, and zesty pasta sauce is hard to beat.
ingredients
1 package (15 ounce size) part-skim ricotta cheese
2 eggs, beaten
1/4 cup grated Parmesan cheese
1/4 teaspoon black pepper
2 tablespoons minced fresh parsley
1 package (16 ounce size) ziti, cooked and drained
1 jar (30 ounce size) chunky pasta sauce
1 cup shredded mozzarella cheese
directions
Preheat oven to 350 degrees F.
In a large bowl, combine Ricotta cheese, eggs, Parmesan cheese and seasonings.
In another bowl, thoroughly combine cooked pasta and sauce. Place half the pasta mixture in a 13" x 9" baking dish. Evenly top with cheese mixture and remaining pasta. Sprinkle with Mozzarella cheese.
Bake 35-40 minutes or until bubbly.

I've been making a lot of Italian-style recipes lately just out of habit. But I'm glad that I picked this recipe. The Ricotta, eggs, and Parmesan provided a distinct filling layer and change of pace in flavors over the usual pasta and sauce combinations.
