Fire up the grill for some summertime cooking! This spicy corn on the cob is sure to become a new favorite. Assemble the packets ahead of time and then just toss it on the grill when your other food is almost done.
1/2 cup butter, softened
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
8 ears corn
Preheat the grill to medium-high heat.
Combine the butter, salt, pepper, paprika, cumin, and chili powder in a bowl. Mix well. The butter can be made ahead of time and refrigerated. Let come to room temperature before using.
Remove the husks and silk from the corn. Place each ear of corn on a sheet of aluminum foil. Spread 1 tablespoon of the butter mixture on each ear of corn, coating all the kernels. Fold the aluminum foil around the corn and seal the edges so the butter won't leak out while grilling.
Place the foil-wrapped corn on the grill and cook for 4-5 minutes, turning once or twice during the cooking time, until the corn is tender and hot.
Remove the corn from the grill and let stand for 1 minute before opening the foil. Place the corn on individual plates and drizzle with the butter from the foil packet. Serve immediately.

The flavor of the spice rub is wonderful! The smoked paprika gives it really nice color and flavor. This was nice because you can just throw it on the grill when your other food is almost done cooking. You can make the foil packets ahead of time too.
