Cheesy Broccoli Carrot Casserole

ingredients
1 package (10 ounce size) frozen broccoli florets
1/4 cup chopped onion
1 can (10.75 ounce size) cream of chicken soup
1/2 cup sour cream
1 cup sharp Cheddar cheese
1 cup shredded carrots
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons butter, melted
3/4 cup herb seasoned stuffing mix
directions
In a saucepan cook broccoli and chopped onion in a small amount of boiling water for 5 minutes. Drain and set aside.
In a 1 1/2 quart casserole combine soup and sour cream. Stir in shredded carrots, flour, salt, and pepper. Fold in drained broccoli-onion mixture and cheese.
Combine stuffing mix and butter, sprinkle over vegetables. Bake at 350 degrees F for 25-30 minutes or until heated.

This recipe sounded like it had a lot going on - broccoli, carrots, stuffing, etc, but it really works and everyone really enjoyed it. Thank you for sharing it!

I just made this for a funeral dinner at my church. I doubled the recipe using 2 -12oz pkg. of California mix and 1 pkg of broccoli. I added a little extra cheese - parmasean. I use a box of stove top stuffing mix for top. Everyone loved it.

I made this recipe YEARS ago for a restaurant. Just had a telephone call from a former employee asking if I would share recipe. I could not remember it. Went on line and found it. So happy she called to trigger my memory and thankful to find the recipe once more. VERY GOOD! Everyone at restaurant loved it !

Really liked the casserole. Takes care of the veg portion of a meal! Substituted cream of mushroom for cream of chicken to keep it vegetarian. Excellent!
