Baked Broccoli and Cheese

ingredients
1/4 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste
1 can (10.75 ounce size) cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
1/4 cup onions, minced
1 head broccoli, chopped
1 jar (2 ounce size) pimiento, chopped
1 cup shredded sharp Cheddar cheese
1/4 teaspoon paprika
directions
Preheat oven to 350 degrees F.
Butter a 13 x 9 x 2 inch baking dish.
In a medium sized mixing bowl, whisk together condensed soup, mayonnaise, beaten egg, and, if desired, chopped onion.
Place broccoli in a large mixing bowl. Pour soup-mayonnaise mixture on top of broccoli and mix well. Add pimento and cheese, mix well.
Pour mixture into prepared baking dish and smooth top of casserole using a spatula. Sprinkle lightly with paprika plus salt and pepper if desired.
Bake at 350 degrees F for 45 minutes to 1 hour. Serve hot.

Awesome! I doubled this recipe, used 4 stalks of broccoli, and added a 3oz. bag of Oscar Meyer real bacon bits (Real, as in not the crunchy kind). Got great comments from all guests and most of it disappeared. I will make this again.

This is a good, creamy broccoli and cheese recipe. I omit the onions because my kids won't eat them.
