ingredients
2 cups chopped frozen broccoli, cooked and drained
4 slices day-old whole wheat bread, cubed
6 ounces Cheddar cheese, grated
1/2 cup chopped onion
1 cup skim milk
4 large eggs
1 teaspoon chopped fresh parsley
1/2 teaspoon powdered garlic
1/2 teaspoon dry mustard
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
directions
Preheat the oven to 350 degrees F. Coat a 2-quart casserole with nonstick cooking spray.
In the prepared casserole, evenly layer the broccoli, bread, 1/2 of the cheese, and the onion. Sprinkle the remaining cheese evenly on the top. Whisk together the remaining ingredients in a bowl.
Pour the mixture into the casserole. Bake for 40 minutes or until custard is set and slightly puffed. Let cool 5 minutes before serving.
