Kamja Namul (Exotic Stir Fried Potatoes)

ingredients
1 tablespoon kosher salt, DISSOLVED IN
4 cups water
2 large Idaho potatoes, peeled, and cut into 1/2-inch cubes
2 tablespoons vegetable oil
1 teaspoon sesame oil
1 clove garlic, crushed, peeled, and minced
2 tablespoons dark soy sauce
2 teaspoons sweet and sour sauce
4 shiso leaves (perilla), julienne-cut
1/2 teaspoon toasted sesame seeds
directions
Whisk the salt with the water in a bowl until the salt is completely dissolved. Add the potatoes and allow to soak for 20 minutes. Drain.
Heat the vegetable and sesame oils in a nonstick pan over high heat. Stir-fry the garlic until golden, 1 to 2 minutes. Add the potatoes and stir-fry until almost tender, about 10 minutes.
Stir together the soy sauce and chili paste in a bowl until smooth and add to the stir-fry. Continue to stir-fry the potatoes until any liquid is absorbed and the potatoes become lightly crisp, about 10 minutes more.
Transfer to a platter, garnish with julienne-cut shiso, sprinkle with toasted sesame seeds and serve.
