A fun way to serve cookies - on a stick! The cookie dough is made simple by starting with a cake mix. Decorate as desired. Great for any occasion.
1 package (15-18 ounce size) any flavor cake mix
1/3 cup vegetable oil
2 eggs, lightly beaten
2/3 cup all-purpose flour
flat wooden popsicle sticks
Preheat the oven to 350 degrees F. Grease a baking sheet.
In a mixing bowl, combine the cake mix, oil, eggs, and flour. Mix well.
Form the cake mixture into balls 2-inches in diameter. Insert a popsicle stick into the bottom of each ball.
Place the cookie balls on the prepared baking sheet. Flatten each one lightly using the bottom of a glass or rolling pin.
Place the baking sheet in the oven and bake at 350 degrees F for 10-12 minutes or until the cookies are set.
Remove from the oven and let cool for 2-3 minutes on the baking sheet then transfer the cookies to a cooling rack. When cool, decorate as desired. Store the cooled cookies on a stick in an airtight container.

These cookies were good and the kids loved them but mine did not stay on the stick. Disappointing since they were for a church function, but still tasty. Will just present in a different way.

My aunt made these cookies and they sure didn't last long! The kids just devoured them. Even my son, the world's pickiest child, claimed they were really good and had two. She made two changes...she used lollipop sticks and sprinkled sugar on them before baking. Yum!
