Kale Soup Recipe

Ingredients:
4 cups defatted low sodium chicken broth *
4 cups chopped kale
1 cup julienned fennel
1 cup julienned carrots
1/2 cup chopped onion
1/2 teaspoon thyme leaves, crushed
1/8 teaspoon black pepper
Directions:
* To defat chicken broth, skim fat from surface of broth with spoon. Or, place can of broth in refrigerator at least 2 hours ahead of time. Before using, remove fat that has hardened on surface of broth.
Combine chicken broth, kale, fennel, carrots, onion, thyme and pepper in stockpot; bring to a boil over high heat. Reduce heat to low. Simmer, uncovered, 10 minutes.
